Cooking with Julia: Nana’s Meatballs

It took over a year to renovate the main living area of our house. Walls were torn out, new floors were installed, and the kitchen was gutted. We cooked in the den and ordered a lot of take out.

With the end in sight, one of the most exciting day was when our brand new Blue Star range was delivered by the Appliance Solution. Six burners of amazing propane power clad in a navy blue finish with antique brass handles and knobs, it was a thing of beauty.

While the range is gorgeous to look at, it cooks even better than it looks. Julia has been itching to cook on it since it was installed, and after the backsplash was installed I finally relented.

“What do you want to cook Jules?”

“Nana’s meatballs! Mama mia!” she exclaimed making a wild Italian inspired hand gesture.

My Nana Bonfanti’s meatballs, the best I’ve ever tasted, include the following:

  • 1 lb ground beef
  • 1 lb ground pork
  • 1/4 cup chopped Italian parsley
  • 1/2 cup grated Romano cheese
  • 1 tbs chopped oregano
  • 1 tbs chopped basil
  • 3 eggs
  • 1/2 cup bread crumbs
  • salt and pepper

In a large bowl combine the meat, herbs, cheese, salt and pepper. Add the eggs and combine. Add the breadcrumbs and combine. If the mixture is too wet, add more breadcrumbs. Shape the mixture into palm sized balls and fry until browned on the exterior. Drop into a pot of sauce and allow to simmer, or place on a sub roll with sauce, provolone, and enjoy immediately.

The temperature control available from the Blue Star range and even cooking, thanks to the star shaped burners, allowed the meatballs to brown beautifully without burning. Julia did a great job cooking (with some help), and the meatballs turned out great!
