The latest stop in my search for great local BBQ took me to Food Truck Wednesday in the parking lot of the Four Oaks Church on W. Shannon Lakes Road. Royal Porker BBQ was set in a spot furthest away from the street in a bright orange trailer. A purple coat of arms displayed a chicken, bull, and boar and declared the food truck to be the kings of BBQ.
A menu board next to the truck listed the various meats that had been smoked during the day, along with available side items. This evening Royal Porker offered brisket, ribs, pulled pork, and chicken. Plates ranged from $15.00 (for two meats) to $8.50 (for pulled pork), and came with two sides and a slice of garlic bread. I approached the window, curious to see if the food lived up to the bold statement emblazoned on the side of the truck, and ordered the pulled pork with sides of coleslaw and mac ‘n cheese.
